- 4 large eggs
- ½ cup pumpkin puree
- 2 teaspoon ground cinnamon
- 1 teaspoon vanilla extract
- 8 slices brioche or challah bread
- Butter for the skillet
- Maple syrup and powdered sugar to serve
1. In a large bowl, whisk the eggs, milk, pumpkin puree, cinnamon and vanilla
2. Heat the skillet or griddle over medium heat
3. Dip each slice of bread in the pumpkin mixture, coating each side.
4. Melt a little butter on the skillet and cook the bread for 2-3 minutes per side, or until golden brown.
Serve warm and top with maple syrup and powdered sugar.
