ginger beer (use a strong, spicy one for that real Moscow Mule kick)
vodka (I like Tito’s or any clean, neutral vodka)
fresh lime juice (about 2 limes)
simple syrup (optional, depending on how sweet your ginger beer is)
thin lime slices and fresh mint leaves (optional, for a cute garnish in the mold)

Ingredients
- 1 cup ginger beer
- ½ cup vodka
- ¼ cup fresh lime juice
- 1–2 tablespoons simple syrup (optional, depending on how sweet your ginger beer is)
- Thin lime slices (optional, for a cute garnish in the mold)
Instructions
- In a large measuring cup or mixing bowl, combine the ginger beer, vodka, lime juice, and simple syrup (if using). Give it a gentle stir.
- Pour the mixture into your popsicle molds. Evenly divide the mixture into each mold. Add a thin slice of lime and a mint leaf to each mold if you're feeling fancy—it looks so good when frozen!
- Insert sticks and freeze for at least 6–8 hours, or overnight.
- To release, run warm water over the outside of the mold for a few seconds. Serve immediately—in a copper mugs just for the vibe.
